Burnt-on residue may be removed by pre-soaking the cookware for 10 minutes. Cracks in glaze: Heating the dish: Slow heating is recommended. We do not recommend pre-heating an empty pot (except when using a no-knead bread or bread recipes). Food cooked in clay dishes takes longer to heat than food cooked in metal ones due to differences in heat diffusion – usually around ten minutes longer. Once on the table, your dish will retain its heat and thus keep your dish warm for a longer period of time. Emile Henry products can be used with gas, electric and halogen heat sources. (Excluding the Pizza Stone & Grilling/Baking Stone) Resistance Against Mechanical Shocks: During everyday use, there are many opportunities to bang a dish or a set of plates. Particularly resistant to shocks, our ceramic is even used in restaurants! Resistance Against Temperature Changes: A dish or stew pot should be able to withstand wide variations in temperature. Our ceramics allow our products to be taken directly from the freezer to the hot oven (+250°C/500°F). Resistance Against Fading Colours: Heat, the dishwasher or sharp instruments will all have an aging effect on a product.
